Meet Fabio Consonni of DiTondo, a Buffalo culinary institution, and one of my favorite spots for Italian outside of Italy. Over the past few months, I’ve collaborated with Visit Buffalo Niagara, the region's tourism bureau, to photograph some of the city’s most renowned chefs for their 2025 dining guide.
Fabio’s wife, Rita DiTondo, is the fourth generation of the DiTondo family. She continues the legacy her great-grandfather, Sebastiano, started when he immigrated from Abruzzo, Italy, and opened their beloved restaurant in 1904.
Before joining the DiTondo family business, Fabio honed his skills at the renowned Gramercy Tavern in New York City, where he refined his culinary expertise in the heart of Manhattan’s fine dining scene.
Today, as the head chef at DiTondo, he brings a unique fusion of his traditional Italian roots and the refined techniques he mastered in New York. Fabio effortlessly marries the classic recipes that have defined DiTondo for over a century with contemporary twists, creating an experience that feels both timeless and innovative.
